Hippies. That’s the first thing you think of when you think of vegans. Hippies, and VW Vans, granola and lettuce. When I think vegan I think Seabirds and when I think Seabirds, I think:

I know they have the deep fried avocado tacos, the biscuits and gravy, the roasted beets that shouldn’t be shared, but what I really love to eat at Seabirds Kitchen in Costa Mesa at the Lab, is their Chaffle. A waffle made with churro batter that uses cinnamon sugar like a medieval night uses chain mail armor. You’ll be scraping up those assorted nuts covered in leftover chocolate and ice cream like their were an escaped convict in the Arizona wilderness.
