In baseball the fastball is the sexy pitch and the changeup is just an afterthought. But for those who know, the changeup is the best strikeout pitch around. Want proof? Trevor Hoffman of the San Diego Padres, blew out his arm in 1994 and had to rely on only his changeup to get the job done. He spent the next 16 years as one of the most dominant closers in baseball throwing a pitch that only travels 73 mph.

The same can be said for a perfect side of chips, like those at Stockyard Sandwich Company in the 4th street marketplace in Santa Ana. Most people don’t think that much about that side of chips, but what if the owner of Stockyard, Phil Burden, has been spending years perfecting his chips. He’s tried different oils, thickness, types of potatoes etc… until he discovered a process that I think makes the best chip in Orange County, heck maybe the best chip I’ve ever had.

Just like you’ll never blow your arm out pitching changeups, you can never get sick of chips. Heck I can eat bowl after bowl of these bad boys. I’d eat them till I heard the Bells of Hell calling.
